Setting Regular and Holiday Hours in Google Business Profile
Regular hours are the weekly opening times on a profile; special hours override them for holidays and one-off closures. Google uses them to show 'Open' or 'Closed' and to filter 'open now' searches, and may flag a profile whose hours look out of date.
